Five Minute Curry
This is really just to show how easy it can be to make good food from leftovers. I brought this for lunch with whatever I could find in the fridge in <2 minutes and a quick curry powder that I made up.
ingredients
- 1 cup cooked rice (leftover from last night's dinner)
- 1/2 tsp chili powder
- 1/2 tsp turmeric
- 1/2 tsp fenugreek
- 1/4 tsp cumin (optional)
- 1/4 cup chick peas
- 1-2 Tbs chili pickle
- splash of water (enough to help the spices cook into the rice)
how to
Mix everything in a bowl and microwave for 2-4 minutes. Enjoy.
other ideas
Other ingredients could include leftover baked potatos cut into chunks, leftover chick/lamb/beef/tofu/TVP. You could use any condiment in place of the chili pickle or leave it out all together: mango/mixed pickle, salsa (substitue mexican spices), any marinade, hot sauce...
