Hot Potato Salad

It's not really salad so i don't know why they call it that. Anyway this was one of my favorites growing up. It is traditionally prepared with real hot dogs and in a pressure cooker to 15lb (again i don't know why they call it 15lb since that is a force and not a pressure?). It is a very hearty dish and is great on cold wintery nights.

  • 6-8 potatoes, sliced into 1/8" pieces
  • 1 lb hotdogs (tofu in this case)
  • 1 medium onion sliced (you want big pieces, not chopped)
  • 1/2 cup white vinegar
  • 1/4 cup oil
  • 1/4 cup water
  • 6-8 Tbs white sugar (brown sugar is ok but will color the dish)
  • parsley to taste
  • salt and black pepper to taste (lots of pepper)

If you are not using a pressure cooker par boil the potatoes first. Either way combine everything into your pot and cook on a medium heat until the potatoes and onions are soft.
